On the palate, pleasant acidity with a mellow attack. Concentrated fruits expand on the palate, giving impression of body. The finish is lingering with supple acidity. Grace insist on using grapes grown above 400m in making Grace Koshu.
In the vineyards, in order to reduce the effects of autumn rain, every bunch is covered with a shade (umbrella) and picked at optimal maturity. The grapes will then undergo long gentle pressing.
